Montevibiano, The Castello in a magical place in Umbria, near Perugia, in the heart of Italy. The grapes of Castello di Monte Vibiano are grown directly on the extensive estate just outside Perugia. They grow grapes such as Trebbiano, Grechetto, Sagrantino, but also Cabernet, Sauvignon, Viognier and Merlot. The maceration with the skins during fermentation ensures the extraction of polyphenols and aroma.

AGEING
The Sangiovese rests in stainless steel
for 15 months. 15 months while
Merlot and Cabernet
Franc are caressed by the wood of
French oak barrique for 15 months. A
further six months in the bottle
completes the picture.
ORGANOLEPTIC CHARACTERISTICS
Reveals a ripe, intense red color. A
decisive and elegant personality on the
nose that foreshadows an explosion on
the red currant palate, where an
initial, almost crunchy black cherry,
gives way to a beautiful red currant. A
nice round and persistent body
supports notes of pure vanilla and
pleasant sensations of Indian black
pepper m grams.
ASSEMBLY SUGGESTIONS
Perfect with pasta with meat sauce or
baked Bolognese lasagna. Not to be
missed with roast beef cheek.
